Layered Farmer’s Cheese Dessert with Lingonberries and Sweet Rye Bread
This is a Nordic/Scandinavian dessert with superb flavors of layered sweet rye and cinnamon, tart lingonberry and smooth farmer's cheese will impress any dinner party guest. It is also super easy to make.
Lingonberries are native to the Scandinavian and Nordic countries but you can buy lingonberry jam from Amazon or IKEA. If farmer's (curd) cheese is not available, you can always use some Greek yoghurt or yoghurt mixed with cottage cheese.
- 1/2 cup lingonberry jam
- 1 cup dark rye bread crumbs
- brown sugar, to taste
- 1/2 tablespoon cinnamon
- 2 cups farmer's cheese
- 1 cup heavy cream, whipped
Adjust the quantities as you please.
Toast the rye bread crumbs on a frying pan with some brown or coconut sugar and cinnamon. Cool down.
Whip the cream and mix with farmer's cheese. Add sugar to taste, depending on how sweet you like the dessert to be.
Put layers of cheese, lingonberry jam and bread crumb mix in dessert bowls.
